Chestnut honey is characterized by its powerful flavor. The chestnut tree (Castanea Sativa) is a tree that grows hollow as it ages and the bees take advantage of the recesses of its trunk to build hives. The color of the chestnut honey can vary from amber to dark amber with a reddish hue (Minimum of 70 mm on the Pfund scale). The aroma of organic chestnut honey is a strong, pungent floral smell, reminiscent of dry wood. The taste of chestnut honey is sweet with salty notes. Dependent on whether chestnut honey also contains heathers, its flavor will have bitter notes, astringent by the presence of tannins. If the chestnut honey is in brambles, its flavor will contain acid notes. Organic chestnut honey has little tendency to crystallize.
