Eucalyptus honey is the answer if you are looking for an intense, sweet flavor, reminiscent of wet wood. In Spain organic eucalyptus honey comes mainly from two species of this tree, Eucalyptus camaldulensis or red, black or summer eucalyptus and Eucalyptus globulus white or winter eucalyptus. Eucalyptus honey has a dark, brown-brown color with green nuances. Values from 40 to 80 mm on the Pfund scale, from extra clear amber to clear amber. Eucalyptus honey has a smell of wet, wet wood or dried mushrooms. Its aroma is intense and persistent. Its taste is sweet, with slight acid notes and sometimes spicy. When it crystallizes it does so in small or medium crystals, forming a compact mass. Organic eucalyptus honey remains liquid for several months. Pollen is highly represented in eucalyptus honey between 70% and 90%.
