Forest honey is collected by bees in forests that are not high mountain. Organic forest honey does not come from flowers alone. Forest honey has its origin in the flowers in the forests and in trees such as oak, chestnut, cork or holm oak, which in the summer or late spring months, eliminate the excess of sugar-rich sap to the outside , secreting a sugary substance called honeydew and collected by bees. Honey from woods that are usually less sweet than honey from only flower nectar. Organic forest honey contains a higher concentration of polyphenol, a compound that gives it greater antioxidant capacity. Mountain honey differs from forest honey because it does not contain flower nectar. The color of forest honey is dark amber, almost black when it is liquid with at least 90mm on the Pfund scale. The dark color is provided by small amounts of minerals such as manganese, zinc, iron or copper. It crystallizes very slowly, acquiring a brown color. The forest honey smell resembles dry forest leaves, toasted cereals, intense and persistent. The taste of forest honey recalls the taste of wood with an aftertaste of toasted cereal.
