Orange blossom honey or azahar honey and its relaxing floral aroma from clementines, tangerines, grapefruits, oranges and lemons is one of the most exquisite white honeys. The flowers of these trees are called azahar. The flowers of azahar are white, with 5 fleshy petals open star and 10 or more stamens. They bloom in spring, although they can also give blooms out of season. Organic orange blossom honey has a light yellow color (1.3 on the Pfund scale) when it is in a liquid state. This color changes to yellowish white when it crystallizes. Organic azahar hone has a penetrating floral aroma, reminiscent of azahar. This azahar aroma is caused by a compound called methyl anthranilate. Organic orange blossom honey contains little amount of Citrus pollen. This is because many varieties of orange trees are sterile. This causes that for organic azahar honey it is considered monofloral if the percentage of Citrus pollen is between 10% to 20%. In addition orange blossom honey must contain methyl anthranilate, responsible for the aroma "of orange blossom", with a value greater than 5 parts per million.
