Rosemary honey comes from the plant Rosmarinus officinalis. Rosemary is an aromatic plant with white, blue or light blue flowers with a formidable aroma. Its flowers are a delicacy not only for bees but for many other insects. Originally from the Mediterranean, it has spread all over the world. Rosemary grows in warm, dry environments with poor soils. Organic rosemary honey is a spring honey. The bees feed on the nectar of rosemary and to a lesser extent its pollen. Organic rosemary honey is transparent amber, extremely clear, less than 35 mm on the Pfund scale. It has a very discreet, floral aroma. Its flavor is sweet, intense and persistent. When it crystallizes, the rosemary honey turns white. To be considered organic rosemary honey you must have a minimum of 15 to 20% rosemary pollen.
