As is written in the holy book, honey "is a remedy for human beings". Honey was always considered one of the most complete and nutritious foods known. Due to its therapeutic properties, honey has been used since ancient times as a medicine. In Spain is harvested since prehistoric times. In the days of Al-Andalus all kinds of recipes use honey from lamb to porridge. Honey is very important in the kitchen of Muslim culture.

Honey has its origin in the nectar collected by bees. This nectar is a product called pollen found in flowers. Pollen is produced in all kinds of flowers and is processed by bees to transform it into honey. Bees accumulate honey for consumption in the times of the year when there are no flowers. The type of dominant flower in the area where the bees collect the pollen determines the type of honey. Different types of honey have different properties, colors, aromas and flavors.

Honey composition. Honey is composed of sugars, mainly glucose and fructose, and minerals, such as magnesium, potassium, calcium, chlorine sulfur, iron, copper, iodine and zinc. It contains vitamin B1, B2, C, B5 and B3. The quality of the honey is marked by the quality of the nectar and the pollen that the bees collect to produce the honey.

Organic Honey. For the production of organic honey you need to manage the hives in a natural way and following quality rules. The hives should be far from areas of extensive cultivation, cities or any source of contamination. The hives should be in totally wild areas. The feeding of bees must be limited to honey and pollen that they collect without any extra nutrients. Organic honey production does not use any chemical products, neither for the treatment of diseases nor in the hives (paints, varnishes). The extraction of the organic honey must be done in cold, at room temperature and using decantation. If we follow this guidelines, we will obtain an exquisite raw, solid, hard, compact, crystallized and creamy organic honey. These characteristics guarantee a totally natural organic honey and with all its properties intact.
